Kosher Buffalo Cheese?

Israelis Make Kosher Cheese from Buffalo Milk

A buffalo farm in southern Israel is raising buffalo and creating kosher cheese products from their milk. The community acquired the Italian technology needed to learn the cheese making process. The first products for the commercial market will be kashkeval and a smoked mozzarella to be sold in specialty stores and eventually in the larger chains. Avi Beltz, Managing Director of the buffalo farm told Maariv’s NRG web news that boutique dairies are creating new gourmet products all the time. “We expect a 60% growth of our dairy products this year,” he said.
